步骤

  1. Mix the mince with the onion, pepper, garlic, parsley, spices and a good teaspoon of salt. Work it only until combined.

  2. Open each bread along one edge into a pocket without tearing it apart.

  3. Push the filling in and flatten it to an even layer right out to the edges — about 1.5 cm thick.

    💡 An uneven layer is why home hawawshi comes out half raw and half scorched. Press it flat with your palm through the bread.

  4. Brush both sides with melted butter and set on a hot oven tray.

  5. Bake at 220 °C for 20–25 minutes, turning once, until the bread is deep brown and crisp and the juices have soaked in.

  6. Cut into wedges and eat straight away, with pickles and tahini or a squeeze of lemon.

💡 小贴士

  • Egyptian bakeries bake it in the bread oven at fierce heat. At home, the hottest shelf of your oven and a preheated tray is the nearest thing.
  • Rest it 3 minutes before cutting or the juices run out onto the board instead of into the bread.
  • Lamb mince works and is common in Alexandria; the spice mix stays the same.
