  1. Agameya: cook the flour in the 2 tablespoons of ghee 3 minutes until sandy, add the honey and boil 4 minutes until it thickens, then stir in the nuts. Cool until firm enough to roll into small balls.

  2. Rub the soft ghee into the flour with your fingertips for a full 5 minutes, until it looks like wet sand and holds together when squeezed.

    💡 Five minutes of rubbing, and ghee that is soft rather than melted. This is what makes kahk collapse in the mouth; melted ghee makes a dough that bakes hard.

  3. Add the icing sugar, sesame, spices, salt and vanilla, then the milk with the yeast dissolved in it. Bring together without kneading. Rest 45 minutes.

  4. Take a walnut of dough, flatten it, put an agameya ball in the middle, close it and roll smooth. Press the top with a kahk stamp or the tines of a fork.

  5. Bake at 170 °C for 18–20 minutes. They should stay pale — colour means overbaked.

  6. Cool completely on the tray, then bury in icing sugar. Do not dust them warm.

  • Dust cold, always. Sugar on a warm biscuit melts into a wet glaze and you lose the snowdrift look entirely.
  • Lokum, dates, walnuts or pistachios fill the same shell, and plenty of households make them plain.
