The night before, soak the cracked rye and seeds in 400 ml of the water. Cover and leave at room temperature.
Next morning, mix the soaked grain with the starter, both flours, the rest of the water, the buttermilk, salt and malt syrup.
Stir hard with a spoon for 3 minutes. Do not knead — rye has no gluten to develop and kneading achieves nothing.
💡 The dough is a thick batter, not a ball. If it holds its shape on the spoon you have added too much flour.
Scrape into two lined 900 g loaf tins, smooth the tops with a wet spoon, cover and prove 4 to 6 hours until risen by a third.
Bake at 180°C for 1 hour 30 minutes. The internal temperature should reach 98°C.
Cool completely, then wrap in a cloth and leave a full 24 hours before cutting.
💡 Twenty-four hours is not patience for its own sake. Cut warm, rugbrød is gummy and drags on the knife; rested, it slices cleanly.
