الخطوات

  1. Pound the kencur, garlic, chillies and terasi in a mortar to a rough paste.

  2. Add the peanuts and keep pounding until broken but still gritty. Work in the palm sugar, tamarind and salt.

    💡 Stop while you can still feel pieces. Blended smooth it becomes peanut butter with chilli in it — the whole texture of the dish is in that grit.

  3. Loosen with the warm water, a little at a time, to a thick pouring sauce.

  4. Tip all the raw vegetables into the mortar or a bowl and turn them through the sauce with your hands.

  5. Serve immediately, with prawn crackers.

    💡 Immediately means immediately. Salt pulls water out of raw cucumber and cabbage within minutes and the sauce slackens into a puddle.

💡 نصائح

  • Gado-gado boils its vegetables, pecel serves the sauce over them, karedok leaves them raw. Three peanut salads, three different islands' idea of what a vegetable should be.
  • Leave out the terasi and the prawn crackers and it is vegan — but say so honestly rather than pretending the original was.
