  1. Rinse the fine bulgur briefly in cold water and drain it well. Do not soak it in water.

    💡 Water-soaked bulgur turns bloated and bland and leaks into the bowl. In tabbouleh the grain is softened only by tomato juice and lemon, which is where its flavour comes from.

  2. Dice the tomatoes finely, keeping every drop of juice, and tip both tomato and juice over the bulgur. Leave it to sit while you deal with the parsley.

  3. Wash the parsley and — this is the part people skip — dry it completely. Spin it, then roll it in a towel.

    💡 Wet parsley cannot be chopped — the knife bruises it instead of cutting, and it turns black and slimy within the hour. Dry parsley chops clean and stays green.

  4. Strip the parsley leaves from the thick stems. Fine stems are fine to keep; woody ones are not.

  5. Gather the leaves into a tight bundle and chop them as finely as you can with a very sharp knife.

    💡 Slice, do not rock and mince. A blunt knife or a food processor crushes the leaves, drives out the green juice and leaves you with a wet khaki paste. This is the single step that separates real tabbouleh from a sad one — budget 15 minutes and accept it.

  6. Chop the mint leaves the same way, just as finely.

  7. Slice the spring onions thinly.

  8. Check the bulgur: by now it should have drunk the tomato juice and turned tender enough to squash between two fingers. If it is still gritty, give it another 10 minutes.

    💡 This is your checkpoint before everything else goes in. Hard bulgur will not soften once the oil coats it — the oil seals the grain.

  9. Add the parsley, mint and spring onions to the bowl with the bulgur and tomatoes.

  10. Pour over the lemon juice, olive oil, salt and allspice.

  11. Toss gently with your hands or two forks, lifting rather than stirring, until everything is just combined.

    💡 Dress it right before serving. Salt and lemon pull water out of parsley, so a tabbouleh dressed an hour early sits in a green puddle.

  12. Taste and adjust — it should taste sharply lemony and properly salted, not shy.

  13. Serve immediately, with romaine leaves alongside for scooping.

  • Beginner's mistake: making it a bulgur salad. Most non-Lebanese versions invert the ratio — a bowl of wheat with parsley stirred through. Real tabbouleh is overwhelmingly green; the bulgur should be a texture you notice, not a component you chew.
  • No fine bulgur? Fine semolina is a genuine traditional variant in some Lebanese homes, and Wikipedia records it as an accepted variation. Do not use coarse bulgur or couscous — neither will soften without boiling.
  • Deseed the tomatoes if yours are very watery — but keep the juice you press out and pour it over the bulgur. You want the flavour, not the flood.
  • Tabbouleh is mezze — it belongs on a table with hummus, baba ganoush and manakish rather than alone. This makes 4 mezze portions; halve it cleanly for two.
