  1. Wrap the ribeye tightly in cling film and put it in the freezer for 45–60 minutes, until it is firm at the edges but a knife still goes through the centre.

    💡 You cannot shave soft, room-temperature steak thinly — the knife drags and tears it. Partial freezing is the entire trick that makes this sandwich possible in a home kitchen.

  2. While it firms up, halve and thinly slice the onion, and slice the bell pepper if you are using it.

  3. Take the steak out and shave it against the grain as thinly as you possibly can — aim for slices you could almost read through.

    💡 Against the grain shortens the muscle fibres so the meat gives way instantly when you bite. Slice with the grain and you get chewy strings, no matter how good the ribeye was.

  4. Split the rolls most of the way through, leaving a hinge, and open them out ready by the stove.

  5. Heat a large flat pan or griddle over high heat until a drop of water skitters and vanishes. Add the oil.

    💡 A cheesesteak shop griddle runs hot and dry. If your pan is not properly hot the meat will release water and stew grey instead of searing brown.

  6. Cook the onion (and pepper) for 5–6 minutes, stirring, until soft and browning at the edges. Push them to one side of the pan.

  7. Spread the shaved beef in a single layer on the empty side. Leave it completely alone for 45 seconds.

    💡 Those 45 seconds of contact are where the browning happens. Stir straight away and the pan temperature crashes, the meat weeps, and you get boiled beef.

  8. Now chop the meat as it cooks, working two spatulas against each other, cutting it into rough shreds for about 2 minutes.

    💡 Chopping on the griddle is not optional garnish work — it is how the texture is made. You want ragged shreds that tangle together, not neat slices.

  9. Season with salt and plenty of black pepper, then mix the onions through the meat and gather it all into two roll-shaped mounds.

  10. Lay the provolone over the two mounds, turn the heat to low, and give it 60–90 seconds to melt into the meat.

    💡 Melting the cheese onto the meat in the pan, rather than laying it in the roll, is what fuses the filling into one thing instead of a sandwich of separate parts.

  11. Press an open roll down over each mound, cut side down, and hold it there for 10 seconds so it warms and catches the steam.

    💡 The roll is steaming and soaking up the fat at the same time. This is also the only warming the bread gets — a cold roll makes the whole sandwich feel like leftovers.

  12. Slide a spatula under the mound, and in one motion flip the whole thing — roll, meat and all — so the filling lands inside the bread.

    💡 This flip is how it is done at the counter, and it keeps the layers in order. If it feels precarious, just scoop the filling into the roll — it tastes identical.

  13. Press the roll closed, cut each sandwich in half on a diagonal, and eat it immediately, standing up.

  • Beginner's mistake: using a lean cut to be healthy. Sirloin or rump goes tough and dry the moment it hits a hot griddle, because there is no marbling to melt. Ribeye's fat is the whole point — this is not the sandwich to lighten.
  • The cheese question is a genuine local argument, not a hierarchy. Provolone (used here) is sharpest, American melts smoothest, Cheez Whiz is the one tourists order. All three are ordered daily in Philadelphia.
  • 'Wit' or 'witout' means with or without onions — that is the actual ordering language, and onions are the default. The bell pepper here is optional and not part of the plainest version.
  • No time to freeze the steak? Ask a butcher to shave it for you, or buy pre-shaved 'sandwich steak'. Do not try to slice it thin at room temperature — you will end up with thick, chewy chunks.
