Zubereitung

  1. Rinse the rice twice, then put it in a heavy pot with the water and the salt and simmer 10 minutes until the water is nearly gone.

  2. Pour in the coconut milk and add the orange peel. Bring it to a bare simmer.

    💡 Bare simmer, and stir the bottom every few minutes. Coconut milk and rice both catch, and scorched coconut milk cannot be hidden by sugar.

  3. Cook 25 minutes, stirring often, until the grains are soft and the whole thing has thickened to a loose porridge.

  4. Stir in the sugar, vanilla and nutmeg and cook 5 minutes more.

    💡 Sugar goes in near the end. Added at the start it makes the rice take twice as long to soften.

  5. Fish out the orange peel. It should still pour thickly off a spoon — it firms up a lot as it cools.

  6. Serve warm in bowls, or chill it and eat it cold with a little extra coconut milk poured over.

💡 Tipps

  • Sombi is a Ramadan staple in Senegal, made to break the fast because it is gentle on an empty stomach and keeps well.
  • It thickens hard in the fridge. Loosen it with coconut milk, never water — water makes it taste thin.
  • Some households add a spoon of orange blossom water at the end instead of vanilla. Both are common.
