Zubereitung

  1. Warm the oil in a large pot over medium heat and soften the onions for 8–10 minutes until they collapse and turn pale gold.

  2. Add the chicken, ginger, turmeric, ras el hanout, saffron water and salt. Turn the chicken to coat and let it colour lightly for 5 minutes.

  3. Pour in the water, bring to a boil, then lower to a simmer, cover and cook 40 minutes.

  4. Add the lentils and the fenugreek seeds and cook, part-covered, another 25–30 minutes, until the chicken is falling off the bone and the lentils are soft.

    💡 Fenugreek seeds are hard and bitter raw; they need this long simmer to soften and mellow. Add them whole with the lentils, not at the start, or the bitterness dominates.

  5. While it simmers, steam or briefly warm the torn flatbread so it is soft and pliable, then spread it over a large platter.

  6. Pile the chicken in the centre, spoon the lentils and plenty of broth over the bread so it soaks in, and scatter with the herbs.

    💡 The bread should be wet and soft, almost like a savoury bread pudding — that soaking is the whole idea, not a soggy accident.

  7. Serve at once, family-style, with everyone eating from the shared platter.

  • Rfissa is traditionally cooked for a woman who has just given birth, because fenugreek is believed to help recovery and milk supply — so it is a warm, restorative, celebratory dish, not an everyday one.
  • No msemen on hand? Any torn flatbread that can soak up broth works — even day-old khobz or a torn tortilla. The point is a bed of bread under the stew, not a specific loaf.
