Make a salt tare by dissolving sea salt in warm sake with a splash of kombu dashi until it tastes clean and briny.
Keep the chicken stock hot and skim it so the finished broth stays pale and clear.
Spoon the salt tare into each bowl, then pour in the hot stock and stir to a light, glassy broth.
Boil the thin noodles until just tender and drain them well.
Nest the noodles in the broth and keep the surface clear of scum.
Top with chicken, egg, scallion, nori and menma, and serve straight away.
