Get a bed of coals going and set the potjie over them. Brown the meat in the oil in batches, 10 minutes.
Take the meat out, soften the onion for 8 minutes, then put the meat back on top of it.
Add the stock, bay, cloves, salt and pepper, put the lid on and leave it 1 hour 30 minutes. Do not lift the lid.
Layer the vegetables on top in order of cooking time — carrot, then potato, then butternut, then beans, then cabbage. Do not push them down into the liquid.
💡 The layers are the whole design. The bottom braises, the top steams, and everything finishes at the same moment — mixing it in destroys that.
Spoon the apricot jam and vinegar over the top, put the lid back and cook another 1 hour 30 minutes.
Serve straight from the pot, digging down through the layers with a ladle so each plate gets some of everything.
