  1. Soften the sliced peppers (and onion if using) in olive oil over medium heat.

  2. Add the tomatoes and a pinch of paprika and chili, and simmer until the mixture thickens and the liquid cooks off.

  3. Season with salt, then lower the heat.

  4. Crack the eggs straight into the pan and stir gently so they set in soft folds among the tomato.

  5. Take it off the heat while the eggs are still creamy.

  6. Serve straight from the pan with plenty of crusty bread.

💡 نصائح

  • Cook the tomatoes down well before the eggs go in.
  • Pull it off the heat slightly underdone — the eggs keep setting.
  • Traditionally made without onion, but it's a matter of taste.
