Cook the rice and fry the chips first, and keep both hot. The stir-fry takes six minutes and will not wait.
Toss the beef with the salt, pepper and cumin. Get the wok or a heavy pan as hot as it will go.
💡 As hot as it goes, and cook the beef in two batches. Crowding drops the temperature and the meat stews grey instead of searing.
Sear the beef in half the oil, one layer at a time, 90 seconds a batch. Lift it out.
Add the rest of the oil, then the onion and ají amarillo. Toss over the highest heat for 90 seconds — they should char at the edges and still be crunchy.
Add the garlic, then the tomato, and toss 60 seconds. The tomato must keep its shape.
💡 Everything stays crunchy. Lomo saltado is a stir-fry, not a stew — the moment the vegetables soften you have made something else.
Return the beef, pour in the soy and vinegar, toss twice and take it straight off. Fold in the coriander and tip it over the chips, with rice on the side.
