A bowl of halo-halo — shaved ice with beans, jellies, jackfruit and a scoop of purple ube ice cream on top
入门

Halo-Halo

Shaved ice under evaporated milk over a dozen separate sweets — beans, jellies, jackfruit, purple yam, a scoop of ice cream and a slab of leche flan on top. The name means 'mix-mix', and that is the instruction.

Philippines · mix-mixAn ownerless traditional dish, so no cook is credited. The cited article confirms it as a popular cold dessert in the Philippines made with crushed ice, evaporated milk and flavourings such as ube jam. Quantities, the shaved-not-crushed note and the layering order are this book's own.

步骤

  1. Chill four tall glasses in the freezer for 15 minutes.

  2. Spoon the beans, nata de coco, kaong and jackfruit into the bottom of each glass — a spoonful of each, in layers.

💡 Sweets on the bottom, ice on top, always. Put the ice first and everything you add after just sits on the surface and never reaches the spoon.

  3. Add the sugar, then pack the shaved ice in to the rim.

  4. Pour the evaporated milk over until it soaks down through the ice.

  5. Top with ube halaya, a slab of leche flan, a scoop of ice cream and a scatter of pinipig.

  6. Serve with a long spoon and tell people to mix it properly before the first mouthful.

💡 小贴士

  • Halo-halo means 'mix-mix'. Eating it in neat layers is the one way to get it wrong.
  • The ingredient list is a suggestion. Filipino households and shops all differ, and no two glasses need match.
  • Assemble it at the last minute. Ten minutes standing and it is a glass of sweet milk.
