Brazilian / festa sweet — The brigadeiro appeared in Brazil around the 1940s and is named after Brigadier Eduardo Gomes, an air-force officer and presidential candidate. It has become the default sweet at Brazilian birthday parties, made in home kitchens from just condensed milk, cocoa and butter.

Before you heat anything, sift the cocoa powder into the condensed milk in a cold, non-stick saucepan and whisk until there is not a single dry speck.
💡 Mixing the cocoa in cold is the trick to a smooth brigadeiro. Add cocoa to a hot pan and it clumps instantly, leaving bitter dry lumps you can't whisk out later.
Add the butter and set the pan over low-to-medium heat.
Stir constantly with a silicone spatula, scraping the base and corners the whole time. The mixture will loosen, go glossy, then slowly thicken over about 10–12 minutes.
💡 Never walk away and never stop stirring. Condensed milk scorches on the base in seconds, and a burnt bottom taints the whole batch.
Keep going until the fudge pulls away from the base in a mass: tilt the pan and it should slide across as one soft lump, leaving the pan clean for a second before it flows back.
💡 This 'pulling away' stage is the doneness cue. Stop too early and the balls won't hold; go too far and they turn hard and chewy once cool.
Scrape the fudge onto a greased plate and spread it out a little so it cools faster. Let it cool to room temperature, then chill 20–30 minutes until firm enough to handle.
Tip the sprinkles into a small bowl. Lightly grease your palms with butter.
Scoop out teaspoon-size pieces and roll each between your palms into a smooth ball about 2.5cm across.
Drop each ball into the sprinkles and roll until fully coated, then set in a small paper cup.
Repeat with the rest. Rinse and re-grease your hands if the fudge starts sticking too much.
Serve at room temperature, or chill briefly for a firmer bite.
