Brazilian home-style / lunch-counter — Bife a cavalo — 'steak on horseback' — is a simple, ubiquitous Brazilian dish of a pan-fried steak topped with one or two fried eggs, the runny yolk acting as a sauce. It is a fixture of the prato feito, Brazil's everyday plated set lunch.

Pat the steaks dry and rub them with the minced garlic, lime juice, salt and pepper. Leave 10 minutes while the pan heats.
Heat 15 ml oil in a frying pan over high heat until it shimmers. Sear the steaks for 1–2 minutes per side for a well-browned outside and a juicy centre.
💡 Thin steaks overcook in seconds. Get the pan properly hot first so they colour fast without turning grey and tough.
Lift the steaks onto warm plates and let them rest. If using onion, fry the rings in the same pan for 3 minutes until soft and golden, then pile them over the steaks.
Add the remaining 15 ml oil and fry the eggs gently, sunny-side-up, until the whites are set but the yolks still run. Season with a pinch of salt.
💡 A runny yolk is the whole point — it breaks over the steak and becomes the sauce. Cover the pan for the last 30 seconds to just set the top of the white.
Set a fried egg 'riding' on each steak and serve at once, with white rice, black beans and farofa alongside.
