The smell of a Lisbon summer: whole sardines heavily salted and grilled over charcoal until the skin blisters, then eaten off thick bread that soaks up the oil. Almost nothing to it — the trick is fat fish, fierce heat and coarse salt.

An hour before cooking, bury the sardines in the coarse salt in a dish and leave them in the fridge. Just before grilling, brush or rinse off the excess salt and pat the fish dry.
💡 The salt draws out moisture and firms the flesh so it holds together on the grill. Do not skip it and do not skimp — under-salted sardines fall apart and taste flat.
Get a charcoal grill fiercely hot, or a griddle pan smoking. Sardines want high, dry heat and no oil on the grill — their own fat is enough.
Grill the sardines 3–4 minutes a side without moving them, until the skin is blistered, charred in spots and crisp. They are ready when the skin lifts easily from the grill.
💡 Turn them only once. Fiddling with them tears the skin — wait until they release themselves before flipping.
Lay each hot sardine on a slice of bread so the smoky oil soaks in, with the potatoes and peppers alongside and lemon to squeeze over.
Eat with your hands, lifting the top fillet off the bone, then the bottom. The oil-soaked bread underneath is the reward at the end.
