วิธีทำ

  1. Mix the sliced chicken with the yogurt, garlic, tomato paste, spices, oil and salt. Cover and marinate for at least 30 minutes, or overnight in the fridge for more flavour.

  2. Make the sauces: stir the yogurt with grated garlic, a squeeze of lemon and salt for the white sauce; blend the chilli-sauce ingredients if using. Shred the cabbage and slice the salad vegetables.

  3. Get a heavy pan or grill very hot. Cook the marinated chicken in a single layer, without stirring at first, so it takes a proper char before you turn it — 5–7 minutes total. Work in batches rather than crowding.

    💡 The whole point of döner meat is the charred, crisp edges the vertical spit gives. A crowded pan steams the meat pale and grey — high heat and space are what recreate it at home.

  4. Warm the flatbreads and split them into a pocket, or lay them open to wrap. Smear the inside with the garlic-yogurt sauce.

  5. Fill with a base of shredded cabbage, then the hot charred chicken, then tomato, cucumber and onion. Finish with more yogurt sauce and the chilli sauce to taste.

  6. Fold or wrap tightly and eat immediately, while the meat is crisp and the bread is warm.
