Simmer the chicken with the onion, spring onion, half the guascas and the water for 35 minutes. Lift the chicken out and shred it.
Strain the broth back into the pot and add the papa criolla and the floury potatoes. Simmer 30 minutes.
💡 These two are meant to fall apart. Do not fish out the pieces — their collapse is what gives ajiaco its body.
Add the waxy potato slices and the corn rounds and simmer 20 minutes more. These keep their shape.
Stir in the rest of the guascas and the salt, return the shredded chicken and warm through for 5 minutes.
💡 Half the guascas goes in at the start for depth and half at the end for aroma. Adding it all at once loses the top notes.
Ladle into deep bowls with a piece of corn in each.
Put the capers, cream and sliced avocado on the table. Everyone spoons their own in — this is not optional either.
