Bring the water to a boil, rain in the sago while stirring, and simmer 10–12 minutes, stirring often, until the pearls are clear with only a pinpoint of white at the centre.
💡 Stir from the start. Sago dropped in and left alone welds itself into one lump on the bottom.
Drain and rinse briefly under cold water to wash off the surface starch.
In the same pan, warm the coconut milk, condensed milk, sugar and salt with the agar. Bring just to a boil and simmer 2 minutes so the agar dissolves.
Stir in the sago and cook 3 minutes more until thick.
Pour into a lightly oiled tray to about 3 cm deep. Cool, then chill at least 2 hours until firm.
Cut into squares, top with sesame and serve cold.
