  1. Boil the glass noodles until springy, drain, snip a few times, and dress with a little soy and sesame oil.

  2. Blanch the spinach, squeeze dry, and season lightly.

  3. Stir-fry the onion, carrot and pepper separately just until crisp-tender to keep their colors bright.

  4. Season and stir-fry the beef until cooked.

  5. Combine everything in the pan with soy sauce, sugar, garlic and sesame oil, tossing until glossy and evenly coated.

  6. Finish with sesame seeds and serve warm or at room temperature.
