Modo de preparo

  1. Soften the onion and pepper in olive oil until sweet, then add the garlic and spices and toast briefly.

  2. Add the tomatoes and simmer into a thick, jammy sauce, seasoning with salt.

  3. Make wells in the sauce with the back of a spoon.

  4. Crack an egg into each well and cover the pan.

  5. Cook gently until the whites are just set but the yolks are still runny.

  6. Scatter with herbs and serve straight from the pan with bread to scoop.

💡 Dicas

  • Reduce the sauce well before the eggs go in.
  • Cover the pan so the eggs steam-set on top.
  • Take it off the heat while the yolks are still soft.
