Modo de preparo

  1. Brown the chicken pieces in oil, then remove them.

  2. Soften the onion and garlic in the same pot, add the grated tomato and kabsa spices, and cook to a thick base.

  3. Return the chicken with water or stock, cover, and simmer until the chicken is tender.

  4. Lift out the chicken and keep it warm; measure the cooking liquid for the rice.

  5. Add the soaked rice to the spiced liquid and cook covered on low until fluffy and the liquid is absorbed.

  6. Pile the rice on a platter, top with the chicken, and scatter toasted nuts and raisins.

  • Dried black lime (loomi) gives kabsa its distinctive sour note.
  • Cook the rice in the chicken's own spiced broth for maximum flavor.
  • For a smoky finish, briefly grill or broil the chicken before serving.
