Japanese home-style / 日本の家庭料理 — The everyday soup of a Japanese meal, built on dashi and miso. Miso soup has been a fixture of Japanese home cooking since at least the Muromachi period and anchors the traditional ichijū-sansai (one soup, three sides) meal.

Warm the dashi in a small pot until steaming but not boiling.
Rehydrate the wakame in a little water for a few minutes, then add it to the pot with the tofu.
Scoop the miso into a ladle, lower it into the broth, and whisk it loose so it dissolves without lumps.
Heat through gently — never let it boil hard, which dulls the miso's aroma.
Ladle into bowls and scatter green onion on top.
