Cook the rice slightly firmer than usual and spread it on a tray to cool completely.
Steep the jasmine or pandan in the cold water for 30 minutes, then lift the flowers out and chill the water hard with the ice.
💡 Cold steeping, never hot. Heat pulls a green bitterness out of jasmine, while cold water takes only the scent.
