Pound the shallot, garlic, chili and shrimp paste into a rough spice paste.
Fry the paste in oil until fragrant and the raw smell is gone.
Add the chicken or shrimp and cook through.
Add the cold rice and kecap manis and toss over high heat until every grain is coated and smoky.
Fry the eggs separately until the edges are crisp and the yolk is runny.
Plate the rice and crown each portion with a fried egg; add prawn crackers and cucumber if you like.
