  1. Pack the snow or crushed ice flat and hard in a tray and put it in the freezer while you boil the syrup.

  2. Put the syrup and butter in a deep pan — much deeper than you think you need — and clip on a sugar thermometer.

  3. Boil without stirring until the thermometer reads exactly 112°C. It takes 8 to 12 minutes and the last two degrees come fast.

  4. Take it off the heat immediately and let it stop bubbling, about 30 seconds.

  5. Pour it in a thin line onto the packed snow, about 20 cm long per portion.

  6. Count to five, then lay a stick at one end and roll the ribbon onto it. Eat it straight away.
