Warm the roti through, then stack and cut into strips about 1 cm wide.
Get a wide pan or flat griddle properly hot. Fry the onion, leek, carrot, chillies and curry leaves for 3 minutes.
Push everything aside, crack in the eggs and scramble them roughly, then mix in.
Add the curry meat and its sauce, the curry powder and salt, and stir until hot.
Add the roti strips and chop-and-toss them through the mixture for 2â3 minutes, using two spatulas like blades.
đĄ Chop, do not stir. The point is to shorten the strips and let them drink the sauce, not to fold them gently.
Serve straight from the pan, with extra curry sauce poured over at the table.
