For the filling: melt the palm sugar with the water and knotted pandan, add the grated coconut and cook over low heat, stirring, 15 minutes until it is dark, sticky and no liquid pools when you push it aside.
💡 Cook it drier than looks right. A wet filling soaks the crêpe from the inside and the roll falls open on the plate.
Cool the filling completely.
Whisk the flour, eggs, coconut milk, pandan water and salt to a thin, lump-free batter and rest it 20 minutes.

Put 2 tbsp of filling along the lower third of each crêpe, fold the sides in, and roll it up tight like a small parcel.
