Soak the wheat, barley and lentils together overnight. Next day, boil them in plenty of water with the whole spices until completely soft, 1â1½ hours, topping up water as needed.
Separately, fry half the onions in the oil until golden, add the ginger-garlic paste, chilli, turmeric and salt, then the beef, and fry until it colours. Add water to cover and simmer until the meat is fork-tender, about 1½ hours.
Shred the cooked beef in the pot with a spoon or a hand-masher. Tip the soft grain-and-lentil mixture in and stir the two together.
Blend the whole pot smooth â a stick blender in the pot is easiest â then cook on low, stirring often, for 30â40 minutes until it is thick and glossy and pulls away from the sides. Stir in the tamarind pulp.
đĄ This last slow stir, called 'ghotna', is where haleem gets its silky texture. Keep the spoon moving so the bottom does not catch.
Ladle into bowls and load the top with crisp fried onions, ginger julienne, coriander, a shake of chaat masala and a good squeeze of lemon.
