Soak the poppy seeds in warm water for 30 minutes, then drain and grind them with 2 green chillies and 3–4 tbsp water into a thick, smooth, ivory paste.
💡 A small spice grinder or a mortar works far better than a big blender — poppy seeds are too small and light to catch the blades of a large jug.
Heat 2 tbsp mustard oil in a wide pan until it smokes lightly, then lower the heat. Add the nigella seeds and the 2 whole chillies and wait 15 seconds.
Add the potato cubes with the turmeric and salt. Fry over medium heat for 8 minutes, turning them, until the edges are golden and the surfaces are no longer raw.
Stir in the poppy seed paste and coat every piece. Cook 2 minutes, then add 150 ml water, cover and cook 10 minutes over low heat until the potatoes are tender.
💡 Poppy seed paste catches and scorches easily, and burnt posto is unmistakably bitter. Keep the heat low from here on and stir every couple of minutes.
Uncover and cook off any loose liquid — the paste should cling to the potatoes, not pool underneath. Taste and add salt.
Take it off the heat and stir in the last tablespoon of raw mustard oil. Serve warm or at room temperature with rice.
