Steam the sweet potato and taro cubes, in separate piles, 15 minutes until just tender — a knife goes in but they hold their corners.
💡 Steam, and separately. Boiled cubes collapse and bleed colour into each other; steamed ones stay distinct, which is the look of the dish.
Boil the sago in plenty of water 10 minutes, stirring, until translucent with a white dot at the centre. Turn off the heat, cover 5 minutes, then rinse under cold water.
Bring the coconut milk, water, sugar, salt and pandan to a gentle simmer. Do not boil hard — coconut milk splits.
Add the steamed sweet potato and taro, the sago and the tapioca jellies if using. Simmer 5 minutes. Add the banana for the last 2 minutes.
Remove the pandan. Serve hot, or cool and chill and serve cold — both are correct.
