  1. Put the beef in the pot with the water, bring to a boil and skim thoroughly for the first 10 minutes.

    💡 Skim like you mean it. A clear nilaga is the whole point, and what you do not remove now clouds the pot for good.

  2. Add the onion and peppercorns, cover partly, and simmer at the barest bubble 2 hours until the meat is tender and pulls from the bone.

  3. Season with the fish sauce and salt. Add the corn and potatoes and cook 15 minutes.

  4. Add the cabbage wedges and cook 5 minutes, then the bok choy for 2 minutes more — it should stay bright green.

    💡 Vegetables in order of toughness, and greens last. Cabbage that has boiled twenty minutes is grey and sweet-smelling in the wrong way.

  5. Ladle into deep bowls with the spring onions. Put fish sauce, calamansi and chillies on the table and let each person season their own.

💡 Astuces

  • Nilagang baboy is the same pot with pork belly or ribs, done in an hour.
  • A saba banana or two, added with the potatoes, is common in the provinces and gives the broth a faint sweetness.
