Cook the macaroni just under al dente, since it will bake further, and drain.
Melt the butter, whisk in the flour, and cook the roux for a minute without coloring it.
Gradually whisk in the milk and cook until the sauce thickens enough to coat a spoon.
Off the heat, stir in most of the cheese with the mustard powder and a little nutmeg until smooth.
Fold the pasta into the sauce, spread into a dish, and top with the rest of the cheese and the breadcrumbs.
Bake at 190°C (375°F) until bubbling and golden on top.
💡 Tips
- Add the cheese off the heat so the sauce stays smooth, not grainy.
- Undercook the pasta — the oven finishes it.
- A little mustard powder makes the cheese taste more cheesy.
