步骤

  1. Cook the rice slightly firmer than usual and spread it on a tray to cool completely.

  2. Steep the jasmine or pandan in the cold water for 30 minutes, then lift the flowers out and chill the water hard with the ice.

    💡 Cold steeping, never hot. Heat pulls a green bitterness out of jasmine, while cold water takes only the scent.

  3. Tip the cooled rice into the scented water and leave it 10 minutes, then drain it in a sieve.

  4. Dress the shredded mango with the tamarind, palm sugar and salt.

  5. Serve the rice in bowls with a ladle of the cold water poured over, and the mango, pickles, fried chilli, onion and sesame arranged around it.

💡 小贴士

  • It is eaten in April, when Yangon runs at 40°C and the whole country is soaked. Cold rice is not a sad meal there — it is the only sensible one.
  • Fried fish or a salted duck egg on the side turns it into a full meal, and that is how it is usually served. Left plain it stays vegan.
