Ngapyaw Baung (Burmese Banana Pudding)

Ripe bananas stewed in coconut milk and sugar until they collapse into a soft pudding, finished with a scatter of toasted sesame. The dessert Burmese families make for ceremonies precisely because it takes twenty minutes.

食谱提供 Burmese home kitchens · 🏺 传统 · Cooking built on three things — a pot of oil-slicked onion and garlic base, fermented fish or shrimp for depth, and a table where everything arrives at once and is shared.

Myanmar · ceremony banana puddingAn ownerless traditional dessert, so no cook is credited. The cited article confirms ngapyaw baung as bananas stewed in milk, coconut milk and sugar, sprinkled with sesame or poppy seeds, and served at ceremonies because it is quick to make. The ripeness note, the gentle-heat rule, the part-crushing step and quantities are this book's own.

步骤

  1. Peel the bananas and cut into thick rounds.

  2. Warm the coconut milk, milk, sugar and salt in a pan over low heat until the sugar dissolves.

  3. Add the bananas and simmer very gently 12–15 minutes, until they are soft enough to crush against the side of the pan and the liquid has thickened to coat a spoon.

💡 Gently. Coconut milk boiled hard splits into oil and curds; kept at a shiver it stays creamy.

  4. Crush about a third of the banana pieces into the sauce with the back of a spoon so it thickens further, leaving the rest whole.

  5. Spoon into bowls, sprinkle with sesame, and serve warm or chilled.

💡 小贴士

  • It is served at ceremonies and donations because it is quick, but it is also the dessert Burmese cooks reach for when there is nothing in the house but bananas and a tin of coconut milk.
  • A pinch of ground cardamom in the milk is not traditional but is very good.
