Mix the pork, fat, sugar, garlic, shallots, fish sauce, baking powder and pepper, then chill it for 30 minutes.
Beat the cold mixture hard with a spoon or by hand for 5 minutes, throwing it back into the bowl, until it turns pale, tacky and springy.
💡 This beating is the whole texture. Nem nướng should bounce, not crumble, and only the pounding gets it there — no ingredient can fake it.
Work in the roasted rice powder, then mould the mixture around skewers into fat sausages.
Grill over medium coals 10–12 minutes, turning often, until browned and firm.
For the sauce, simmer the soybean sauce with the coconut water and half the peanuts for 8 minutes, then stir in the rest.
