步骤

  1. Bring the coconut milk, water, turmeric, aromatics and salt to a simmer in a heavy pot.

  2. Add the rice and stir over low heat until the liquid is absorbed, about 12 minutes.

    💡 Stir this stage, unlike plain rice. Coconut milk sinks and scorches on the bottom if it is left alone, and burnt coconut carries through the whole pot.

  3. Transfer to a steamer and steam 25 minutes, until the grains are separate and cooked through.

    💡 Absorb then steam — two stages, not one. Cooking it through in the pot alone gives a sticky, heavy rice instead of a light one that holds a cone.

  4. Pull out the lemongrass, galangal and leaves, and fluff with a fork.

  5. Pack into a cone mould or a cone rolled from banana leaf, turn out, and ring with the side dishes.

  6. Scatter fried shallots over the top and serve warm.

💡 小贴士

  • Shaped into a cone it becomes tumpeng, cut at the top by the guest of honour. The gold stands for prosperity, which is why it marks occasions.
  • Cold nasi kuning is fried the next morning with an egg. Nobody throws it away.
