  1. Whisk the rice flour, water, salt and turmeric into a thin batter, the consistency of single cream. Rest 15 minutes.

    💡 Thin. This batter has to run to the bottom of each dimple and set into a shell; a thick batter gives you dumplings, not cups.

  2. Heat the pan over medium heat and brush every dimple with oil. When the oil shimmers, pour batter into each dimple to fill it two-thirds.

  3. Into half the dimples crack a quail egg. Into the other half drop a spoonful of chickpeas and a pinch of spring onion.

  4. Cover and cook 4–5 minutes until the edges are golden and lift cleanly from the pan and the egg whites are set.

    💡 Covered. The lid steams the top while the pan crisps the bottom — uncovered, the egg is still raw when the shell is done.

  5. With a skewer, lift out an egg cup and set it on top of a chickpea cup, pressing the two rims together so they stick — a husband and a wife.

  6. Eat immediately, while the shell still crackles.

💡 小贴士

  • Street carts sell them by the pair in a scrap of newspaper with a shake of pepper. They do not survive a plate — eat from the hand.
  • In Mawlamyine and Upper Myanmar the same snack is called mont ok galay or mont maung hnan — 'little covered snack' and 'couple snack'.
