Central Vietnam · the woven noodleAn ownerless traditional dish, so no cook is credited. The cited article confirms bánh hỏi as a Vietnamese dish of rice vermicelli woven into intricate bundles, often topped with chopped scallions or garlic chives sautéed in oil and served with a complementary meat dish, the strands as thin as a toothpick. The grilled-pork partner, the marinade, timings and quantities are this book's own.

步骤

  1. Marinate the pork with the lemongrass, shallots, garlic, fish sauce, sugar, honey, pepper and 1 tablespoon of oil for at least 1 hour.

  2. Scallion oil: heat the remaining 4 tablespoons of oil until shimmering and pour it over the spring onions with a pinch of salt. It should sizzle and turn bright green.

  3. Steam the dried bánh hỏi sheets 5 minutes until soft and pliable (skip if fresh). Lay them out, brush every sheet with scallion oil, and cut into palm-sized squares.

💡 Oil every sheet while it is still warm. Cold bánh hỏi glues itself into a single slab that no one can separate at the table.

  4. Grill the pork over hot charcoal or under a full grill 3 minutes a side until charred at the edges and glossy.

  5. Arrange the noodle squares on a platter with the pork, peanuts and a little more scallion oil over. Herbs, pickles and nước chấm alongside. Everyone wraps their own.

💡 小贴士

  • Bánh hỏi takes any grilled thing — heo quay (roast pork belly), chả lụa, grilled prawns, or beef in lolot leaves. The woven noodle is the constant; the partner changes with the occasion.
  • At a wedding in Bình Định the noodle comes with pork liver and a dab of the strong fish sauce; at home, thịt nướng is the everyday choice.
