If cooking beans from dried, soak overnight, then simmer in fresh water 45–60 minutes until soft but still whole; drain and cool. (Tinned beans just need rinsing.)
Slice the red onion very thinly, put it in a bowl, sprinkle with the sumac and a pinch of salt, and rub it with your fingers.
Let the onion sit 10 minutes — the sumac and salt soften its raw bite and turn it fragrant.
💡 This step tames the onion so it perfumes the salad instead of overpowering it.
Put the drained beans in a serving bowl.
Add the sumac onions with any juices, then the diced tomato and green pepper.
In a small jar, shake together the olive oil, lemon juice, vinegar and salt.
Pour the dressing over and turn everything gently so the beans don't break.
Fold in most of the parsley and let it stand 10–15 minutes for the beans to soak up the dressing.
Scatter the rest of the parsley on top, add hard-boiled egg wedges if using, and serve at room temperature.
