Pack the snow or crushed ice flat and hard in a tray and put it in the freezer while you boil the syrup.
Put the syrup and butter in a deep pan — much deeper than you think you need — and clip on a sugar thermometer.
💡 A deep pan is a safety instruction, not a preference. Boiling syrup foams to four times its volume and is far hotter than boiling water.
Boil without stirring until the thermometer reads exactly 112°C. It takes 8 to 12 minutes and the last two degrees come fast.
💡 112°C and no higher. At 115°C it sets hard as glass instead of chewy, and there is no way back down.
Take it off the heat immediately and let it stop bubbling, about 30 seconds.
Pour it in a thin line onto the packed snow, about 20 cm long per portion.
Count to five, then lay a stick at one end and roll the ribbon onto it. Eat it straight away.
