  1. Whisk the flour, sugar, baking powder, cardamom, salt, lemon zest, egg yolks and buttermilk into a smooth batter. Rest 30 minutes.

  2. Whisk the whites to soft peaks and fold them in just before cooking.

    💡 Fold the whites in at the last moment. Folded early, they collapse and the æbleskiver come out heavy and flat-sided.

  3. Heat the æbleskiver pan over medium heat and put a knob of butter in each hollow.

  4. Fill each hollow almost to the top. When the edges set, slide a knitting needle down one side and turn it a quarter.

    💡 A quarter turn, three times — not a single flip. Each turn lets raw batter run into the gap, and that is how it becomes a sphere.

  5. Keep turning every 30 seconds until each one is a closed ball and sounds hollow — about 5 minutes.

  6. Serve straight from the pan, buried in icing sugar, with jam for dipping.

💡 Mẹo

  • The name means apple slices and there is no apple in the modern recipe. Old versions had a piece of apple in the middle and the name outlived it.
  • A knitting needle really is the right tool. A fork tears the shell and a skewer is too blunt to catch the edge.
  • They belong to December — served with gløgg at Christmas markets across the country.
