Rinse the rice in cold water until the water runs almost clear, then drain it thoroughly and leave it in the sieve.
💡 Rinsing removes loose surface starch, which is what would otherwise glue the grains together. Jambalaya wants separate grains, not a risotto.
Dice the onion, celery and bell pepper. Mince the garlic. Cut the sausage into rounds and the chicken into 3 cm pieces.
Heat the oil in a wide, heavy pot with a tight lid over medium-high heat. Brown the sausage rounds for 4–5 minutes until their edges curl and crisp, then lift them out.
💡 The sausage is releasing smoky, paprika-stained fat. Everything else cooks in that fat, so do not drain it off.
Season the chicken with salt and brown it in the same fat for 5 minutes, turning once. It does not need to cook through. Lift it out with the sausage.
Drop the onion, celery and bell pepper into the pot. Cook over medium heat for 8 minutes, scraping the browned bits off the bottom as the vegetables release their water.
💡 The vegetables' moisture is deglazing the pot for you. Every brown fleck you lift off the bottom is flavour that would otherwise burn.
Stir in the garlic, smoked paprika, thyme and cayenne and cook for 1 minute, until the spices smell toasted.
Add the tinned tomatoes and cook hard over medium-high heat for 5–6 minutes, until the liquid has largely gone and the mixture darkens into a thick paste.
💡 Cooking the tomato down now, before the rice goes in, drives off the tinny raw-tomato edge and concentrates it. Skip this and the whole pot tastes faintly of tomato soup.
Tip in the drained rice and stir for 2 minutes over medium heat, until every grain is coated and glossy with the red fat.
💡 Coating each grain in fat before any liquid arrives helps them stay separate as they steam. It is the same reason a pilaf is toasted first.
Return the sausage and chicken with any juices, pour in the 600 ml of stock, add the bay leaves, and stir once to level everything.
Bring it to a full boil, then immediately drop the heat to the lowest setting and clamp the lid on.
💡 Once the lid is on, the rice is steaming and the pot is out of your hands. Level the surface before it goes on — you will not get another chance.
Cook for 25 minutes without lifting the lid and without stirring. Not once.
💡 This is the rule beginners break. Lifting the lid dumps the steam that is cooking the top layer; stirring smashes the grains and makes it gluey. Walk away from the pot.
Take the pot off the heat entirely and let it stand, still covered, for 10 minutes.
Take the lid off, fish out the bay leaves, and fluff the rice with a fork, lifting from the bottom so the browned layer comes up through the pot.
💡 That slightly crusted bottom layer has a name in Louisiana — the 'grattons' or bottom crust — and it is prized, not a mistake. Lift it up and mix it through.
Taste and adjust the salt. Scatter the spring onions over and serve straight from the pot.
