Chill four tall glasses in the freezer for 15 minutes.
Spoon the beans, nata de coco, kaong and jackfruit into the bottom of each glass — a spoonful of each, in layers.
💡 Sweets on the bottom, ice on top, always. Put the ice first and everything you add after just sits on the surface and never reaches the spoon.
Add the sugar, then pack the shaved ice in to the rim.
Pour the evaporated milk over until it soaks down through the ice.
Top with ube halaya, a slab of leche flan, a scoop of ice cream and a scatter of pinipig.
Serve with a long spoon and tell people to mix it properly before the first mouthful.
