White bread spread with a filling of grated cheese, onion soup powder and evaporated milk, rolled up and grilled with butter until it browns — Southland's own, and called southern sushi without irony.

New Zealand · Southland — An ownerless traditional dish, so no cook is credited. The cited article confirms it as a New Zealand snack food similar to Welsh rarebit, made by covering bread with a cheese filling and rolling it. Quantities and method are this book's own.

Warm the evaporated milk in a pan with the onion soup powder and stir 2 minutes until it thickens.
Take it off the heat, stir in the cheese and Worcestershire, and let it cool to a thick spreadable paste.
💡 Let it cool and thicken properly. A warm runny filling soaks through the bread and the roll falls apart on the grill.
Spread a thick layer on each slice, right to three edges, and roll it up from one side.
Lay them seam side down and butter the outside all over.
Grill under a hot grill or in a hot pan for 3 minutes a side, turning, until browned all over and the cheese is bubbling out of the ends.
Serve straight away, cut in half on the diagonal, with more butter if anyone asks.
