Bacalhau à Brás — shredded salt cod with straw potatoes, egg and olives
初級

Bacalhau à Brás

The most-loved of Portugal's thousand cod dishes: flaked salt cod tangled with onions and matchstick fried potatoes, then bound in the pan with beaten egg until it sets soft and creamy — never dry.

Portuguese (Lisbon) · traditional dishAn ownerless traditional dish, so no cook is credited. The cited article places the dish in the Bairro Alto quarter of Lisbon in the second half of the 19th century, names 'Brás' as its supposed creator, and confirms the defining set — shredded salt cod, onions, matchstick fried potatoes bound with egg, garnished with black olives and parsley. The wider bacalhau tradition (salt cod as a preservation staple of the Portuguese Atlantic) is well known but is NOT detailed by this specific article and is presented here as background. Quantities and method are this book's own.

作り方

  1. Poach the soaked cod in barely simmering water for 8 minutes, then lift it out and let it cool enough to handle. Peel off any skin and bones and pull the flesh into small shreds with your fingers.

💡 Shredding by hand, not chopping, is what gives this dish its texture — you want soft threads of cod, not cubes.

  2. Fry the matchstick potatoes in hot oil until pale gold and just tender, then drain them on paper. Or, if using bagged shoestring potatoes, skip this step and keep them by the stove.

💡 They will soften again in the egg, so stop while they still have a bite — limp potatoes make a stodgy dish.

  3. In a wide pan, soften the onions and garlic in the olive oil over medium heat for about 8 minutes, until sweet and translucent but not browned. Stir in the shredded cod and warm it through for 2 minutes.

  4. Beat the eggs with the parsley and a little pepper. Turn the heat to low, add the potatoes to the pan, then pour the eggs over everything and stir gently and constantly.

  5. Keep stirring for 1–2 minutes and pull the pan off the heat the moment the egg is creamy and just set — it should look barely done. The residual heat finishes it.

💡 This is the whole dish. Cook the egg one minute too long and it turns dry and rubbery — Brás should be soft and slightly loose, like a barely-set scramble.

  6. Slide onto a plate, scatter the olives and remaining parsley over the top, and eat straight away.

💡 コツ

  • Bacalhau is Portugal's fiel amigo, its 'faithful friend' — salt cod that fed a sea empire because it kept for months on a ship. There really are hundreds of named cod dishes; à Brás is the one to learn first because it needs no oven and no sauce, only timing.
  • Its close cousin bacalhau à Gomes de Sá uses the same cod and onions but bakes them in chunks with sliced potato and whole egg instead of binding everything with beaten egg. If you overcook the egg here, that baked version is more forgiving next time.
