Heat the oven to 180°C and butter a deep 20 × 25 cm dish.
Beat the butter and sugar, then the egg, then fold in the flour, baking powder, salt, milk and vanilla to a thick batter.
Spread the batter in the dish — it will look like far too little for the dish, and that is right.
Bring the maple syrup, cream and syrup butter to the boil in a pan.
Pour the boiling syrup mixture gently over the back of a spoon onto the batter. Do not stir it in.
💡 Boiling syrup onto raw batter, poured over a spoon so it does not blast a hole. The batter floats up through it in the oven — that separation is the entire dish.
Bake 35 minutes until the top is golden and firm and the sauce is bubbling up round the edges. Serve hot with cream.
