Étapes

  1. Stir the yeast and a spoon of the sugar into the warm water and leave 10 minutes until foaming.

  2. Mix the flour, remaining sugar, cardamom and salt, then work in the yeast water and the oil to a soft dough.

  3. Knead 8 minutes until smooth, fold in the raisins, then cover and rise 1 hour until doubled.

  4. Flatten into a round about 25 cm across on a lined tray.

  5. Press the pattern in with the back of a knife: a circle in the middle, then spokes out to the edge like a wheel.

    💡 Press firmly to the base — a shallow mark disappears as the bread rises in the oven.

  6. Rest 20 minutes, then bake at 180 °C for 30–35 minutes until deep golden and hollow-sounding underneath.

💡 Astuces

  • Brush the hot loaf with a little butter as it comes out — it softens the crust and makes the pattern glossy.
  • It is a holiday bread — Meskel, Christmas, weddings — so it is torn and passed around, not sliced neatly.
  • The cardamom is the whole character. Grind the seeds fresh if you can — pre-ground fades fast.
