  1. Fry the sliced onions slowly until deep brown and crisp, then drain — these are the crowning garnish.

  2. Cook the lentils until just tender, and separately cook the rice and the pasta.

  3. Make a garlicky tomato sauce sharpened with a splash of vinegar and a little chili.

  4. Warm the chickpeas through in a little of the sauce.

  5. Layer rice, lentils and pasta in each bowl and ladle the tomato sauce over the top.

  6. Finish with chickpeas and a generous handful of the crispy onions.
