Cut the onion into thin strips and the half block of Spam into cubes, roughly 1.5 cm.
Crack the 2 eggs into a bowl, add a pinch of salt and a little sugar, and beat them until the yolk and white are one colour.
💡 Sugar in the egg is not a typo — it is his. A little sugar makes scrambled egg taste rounder and browns it slightly faster, which is what you want against salty Spam.
Set a pan over medium heat with a little oil, pour in the egg and scramble it in soft folds. Take it out while it still looks a shade underdone.
💡 Residual heat keeps cooking it in the bowl. Egg that looks perfect in the pan is already overcooked by the time it reaches the rice.
Set the scrambled egg aside in a bowl.
In the same pan, fry the Spam cubes over medium heat until they are browned and crisp at the edges — 2–3 minutes, turning them so several faces catch.
💡 Add no oil for this. Spam renders plenty of its own fat, and that rendered fat is what you will fry the onion in next.
Lift the Spam out and set it aside with the egg.
Add a little oil to the pan if it looks dry, then fry the onion strips over medium heat until they soften and go translucent.
Add 1 spoon of jin-ganjang and half a spoon of sugar to the onion, and keep frying until the liquid has cooked away and the onion is glossy and lightly caramelised.
💡 Pour the soy onto the hot pan surface rather than straight onto the onion — it hisses, catches and picks up a toasted edge instead of just tasting salty.
Put a bowl of hot rice out and spread it flat so the toppings have somewhere to sit.
Lay the scrambled egg, the crisp Spam and the soy onion over the rice, keeping each in its own section rather than mixing them.
Squeeze mayonnaise over the top in a zigzag.
💡 Mayo goes on last and off the heat. It is an emulsion of oil and egg — heat it in the pan and it splits into greasy liquid.
If you like, scatter sliced green onion or Cheongyang chili over the top — his own suggestion — then mix it all together as you eat.
